Secret Ingredient
Is using every ingredienti at their peak and giving them the right importance in the finale dish
Our experience with Chef Samuel was overall very positive. He was flexible in the menu planning and responded quickly to change requests at the menu planning stage. He also graciously added my late stage requested prosciutto and threw in some grana padano cheese and flatbread to accompany it. It was a nice touch, and he very nicely didn't adjust the price. The food quality throughout the courses was decent and we enjoyed the evening overall. He might benefit from some greater attention to pre-planning in order to ensure that he is maximally prepared to be timely and efficient. He arrived 30 minutes later than he had said he would, and when I contacted him about it, he said that the delay was because he was looking for the perfect gelato (which was to accompany our chocolate lava cake). It might have been prudent to acquire the gelato the day before rather than on the way to our venue. He couldn't find the best choice and ended up substituting fresh mango for the gelato. I would have preferred the gelato or vanilla ice cream, but it wasn't a major problem. The other issue pertained to timing between courses. I had communicated with him in advance about this, and he had said he generally allows about 20 minutes between each course which seemed fine to me. The reality was that he needed much more than 20 minutes in most instances - again not a major problem but we ended up eating our dessert much later in the evening than we would have preferred. The above issues, all in all, were relatively minor, and I would still recommend considering Chef Samuel for an evening.
